Re:Pasta with Sausage and Kale

Easy and delicious meal to make with my husband. We substituted spinach for the kale since we had it on hand. Makes at least 6 generous portions so plan accordingly.Perfect amount of spice. Definitely try a squeeze of lemon - the acid really brightens it up!

Re:Pork Lo Mein with Seared Scallions & Shiitakes

We enjoyed this dish and the first time we tried Chinese Noodles. Adjusted recipe based on other reviews including increasing marinade (pouring in with meat to cook during this step - watch out for spattering but worth the juiciness), reducing cooking time 2 minutes on scallions and mushrooms, increased ginger to about 2 tablespoons and cooked noodles longer (2-3 minutes) to get some crispness + gold color. Resist urge to stir too much. Used low sodium soy sauce and think salt would be too much if regular soy used. Based on these modifications, we did not need additional seasoning or sauce when we plated. Overall, very tasty and definitely would make this again!

Re:Chicken Paillards with Asparagus, Lemon, Garlic, and Dill

Delicious and easy to make. Enjoyed the balance of flavors. This dish is great for regular rotation when asparagus is in season. Like others, I'd recommend rice or potatoes as a nice side dish (and then double the sauce!)

Liked it but did not love it. Next time I will rinse onions before caramelization. Sauce was a little thick for my liking so plan on more broth. Definitely needed salt for tasting. Served with brown rice.

Re:Pork Chops with Mustard Sauce

Easy and flavorful. Made this with only 2 average size chops and the same quantities for sauce. The resulting amount of sauce was not too much so would increase sauce quantities if making for more servings.
