Re:Rich, Fudgy Brownies

Wonderfully moist, but neither rich nor fudgy compared to other recipes I've tried. Would be better with good chocolate chips baked in them. I baked these again as part of our brownie taste test. I wanted to ensure nothing was over-cooked, so instead I ended up slightly undercooked with a plate that was fondly referred to as "pudding", too under-baked to determine if it could be "fudgy". They did seem richer, but it was a very sweet rich. Too rich for my husband, he didn't like it, a favourite of a couple of the guests though they felt they wouldn't be able to eat very much of it. This recipe, at 2 cups of sugar, had the most sugar of any of the 4 we tried.

Re:Classic Maryland Crab Cakes Recipe

I did this with fake crab and extra dijon instead of the Bay spice (couldn't find it). The fake crab didn't flake at all, so it didn't form cakes well, but the flavour was excellent.

Re:Orange Chicken with Scallions

Nice flavour in the end, a trifle tedious to make. I doubled the chicken and tripled the sauce, but I don't think it's meant to be a sauce so much as a glaze and cooking liquid. I taste tested the liquid in the frying pan and found it bitter, so I sprinkled on a tsp of white sugar and it came out quite nicely. Left-overs were very good too.

Re:Pecan Pineapple Upside-Down Cake

Very moist cake, rich, fresh pineapple gives a nice contrast to the cake flavours.

Re:Chocolate Brigadeiros

I used a 70% cocoa and with the sweetened condensed milk it still turned out a very sweet chocolate, I'd use part unsweetened chocolate next time. I didn't find real chocolate sprinkles, so I just poured the mixture into a 9x9 silicone pan and let it set, it made a thin layer, 13 dozen balls would be tiny balls. The texture was very good, like a chewy fudge.

Re:Classic Carrot Layer Cake with Vanilla Cream Cheese Frosting

It was an OK cake, with a good crumb and moistness, but I have a different carrot cake recipe that includes pineapple that I much prefer. This one seemed to lack something in comparison. I think the icing was a bit excessive, but half a recipe would have been too little. ............ I had no problem with saltiness (and I'm very sensitive to salt) so I wonder if the previous reviewer ended up with salted walnuts.

Re:Sausage, Potato & Apple Sauté

Yummy, but it took a fair while to cut all the potatos small. I think asparagus would make a great side dish.

Re:Lemon Bars

I made this recipe with the crust from a different lemon squares recipe (Company's Coming). The curd is very tart, and the reactions ranged from the best puck face I've ever seen, to highly complimentary. I'd do it again! The base I used didn't hold up well with the left over pieces, though, it did get a bit soggy.

Re:Butternut Squash Soup with Apple & Bacon

Yummy, definitely a do-over. Browning was a challenge, doing it in matches would be better. We used maple bacon and it was very good, but removed all the bacon before adding the other ingredients and only added in the requested bacon at the puree stage. There wasn't extra greasiness.
