Re:Winter Salad with Spiced Maple Vinaigrette

Suspend disbelief and stick with it. When we tasted the dressing alone, we thought "BLECH". But when the salad was all tossed together, it was pretty good. Unusual. We used Cabot clothbound. Could do without the parsnip.

Re:Poached Chicken and Vegetables with Thai Peanut Sauce

Delicious. Plan on more than 1T lime juice. Try to use fresh red curry if you can.

Re:Sour Cream and Leek Mashed Potatoes

Absolutely delicious. Use a potato ricer instead of mashing. Don't be afraid to use extra sour cream to make the potatoes a bit more tangy.

Re:Rustic Bread Stuffing with Dried Cranberries, Hazelnuts & Oyster Mushrooms

Delicious. This has been our go-to stuffing recipe for the past few years. It is always a hit. Try to use home made turkey stock when preparing it. The extra flavor is worth the effort.

Re:Roasted Turkey with Apple Cider Thyme Gravy

Absolutely delicious. We made turkey stock a few days in advance and used it instead of chicken stock for the gravy. We also lined the turkey's cavity with cheesecloth, and packed it with 4 to 5 cups stuffing, and then tied ends of cheesecloth together. We roasted the bird breast side down and when we flipped it half way through we removed the stuffing and finished roasting the bird without it. We mixed the partially cooked stuffing with the rest of the recipe that had been held back and baked the combined stuffing according to the recipe. This is the third year we have made this recipe and it is always a big hit.

Re:Carrot Mash with Orange and Mint

Bland. Tried adding more cream, butter, salt, and hot sauce. Finally added half cup sauteed shallots. Will not make again.

Re:Cauliflower with Brown Butter, Pears, Sage & Hazelnuts

Delicious. You might want to steam the cauliflower in the pan with the lid on for 5 min or so before adding the nuts and sage
