Re:Broiled Salmon with Ginger-Shiitake Glaze

Boyfriend loved it & I loved the idea but I felt it was too sweet with the red pepper and all that honey. If you prefer just a bare hint of sweetness and a more savory flavor, replace a Tbsp or so of the honey with a Tbsp or so of dijon mustard. YUM! Recommend pairing this with Molly Stevens's sauteed spinach w/ shallots (if you do, definitely add additional shiitakes to your sauce)!

This was really very delicious. I followed previous reviewers' advice and only used 2 Tbsp butter + ~2 Tbsp olive oil. I also added fresh ginger and garlic (maybe 1 Tbsp of each) halfway through the shallot sautee because I had it on hand from my accompanying fish dish. This was a PERFECT side for Tony Rosenfeld's salmon with ginger-shiitake glaze; I highly recommend the pairing!

I should note that my cake soaked for ~36 hours and I didn't measure exactly how much of the tres leches liquid I poured over it (could have been less than the 4 cups that were called for). I also added a splash (or two) of Amaretto Liquor which I thought was a GREAT addition.For whatever reason, my cake started to get way too brown on the top long before it was finished baking so I had to drop the temperature 200 degrees and cook it much longer. Ultimately though, it turned out perfect.I made it for a Mexican themed potluck at my office and everyone could not stop raving about it. Two separate people described it as a "home run" and even a coworker who lived in Mexico for several years said it was perfect. I found it to be a great dessert for a crowd because it's not overly sweet so it's tasty for a wide variety of pallets. Seriously, this cake made me the star of our luncheon! Would definitely recommend.

I made this two years ago for my family and my dad still raves about it to this day saying it's one of the best meals he's ever had. It's so simple but the flavors really came together perfectly. Recommend anyone who enjoys fish try this recipe.
