Re:Corn, Bacon, and Red Pepper Sauté

I made this so many times last summer I was convinced my family was sick of it! Alas, there were never leftovers! I switched out the parsley for fresh basil the second time I made it and thought it was even better.

Re:Classic Vanilla Tres Leches Cake

Delicious and oh so rich! A little goes a long way! I would maybe cut down the amount of whipped cream on top, next time. Really enjoyed the subtle coffee flavor. Can't wait to try the coconut version! This is the perfect summer pot-luck dessert. The portions should be small because of the richness so it will feed a lot of people. Enjoy!

Re:Grilled Asian Pork Tenderloin with Peanut Sauce

Easy and so delicious! I fixed it in the morning so it had most of the day to marinate. Great flavor and I wanted to drink the sauce! My daughter said that this is the only way she will eat pork. Served it with jasmine rice and steamed green beans. Thank you for a terrific recipe!

Re:Chocolate Stout Cake

Wow! What a fantastic cake! We made this last year for St. Patrick's Day and were so impressed that it became our go-to birthday/celebration cake. Just made again for our annual St. Paddy's dinner and everyone was moaning with delight as they scraped their plates. The stout and molasses give the chocolate such depth. It keeps very well and is wonderful heated in the microwave for about 15 seconds. Yum!

Re:Chicken & Tortilla Soup

So delicious! I used frozen corn and added it the last 3 minutes that the broth was reducing. I also put the chicken back into the hot broth because it had cooled considerably. My whole family loves this one! Even my kids, ages 6-11 finish every drop of this soup.

Re:Brownie Cream Cheese Bites

These have become a staple on my Christmas cookie plate. They are a nice change from just sugar cookies and fudge. They freeze beautifully. The brownie part is chewy and choclatey and the cream cheese party is rich and creamy. It's a delicious combination.

Re:Classic Potato Pancakes (Latkes)

Pure potato heaven! I've always wanted to try latkes and I'm so glad I did! This recipe is very well written. I followed every step and had terrific results. My husband and I nearly made ourselves ill eating so many of these crunchy on the outside, chewy on the inside bites of joy.

Re:Baked Potato & Leek Soup with Cheddar & Bacon

This soup has become a mainstay for us when the weather turns cold. It is so rich and delicious! My emersion blender works well for this. We might try serving it in a hollowed out bread bowl next time.
