Re:Spanish Potato Tortilla (Tortilla Española) Recipe

I'm from Spain and this recipe is pretty close to the one I cook regularly. Since I've been making it all my life I measure by eye and always turns out great. There are as many variations of Tortilla Espanola as people in Spain. I personally don't add garlic and liked a very thin Tortilla.You could add just about anything to it. Green and red peppers are great and so is zucchini, eggplant, mushrooms...just start experimenting with this one!

Re:Clams with Basil Broth

This is funny....a couple of weeks ago I made this dish. Funny enough, I included exactly the same ingredients that the recipe calls for, although I probably used different amounts. Lots of garlic and onion in my case and a good dose of dry white wine (I used a pinot grigio).I love this recipe because it's been a family recipe for generations.You can also use mussels and would be also delicious. Another substitution would be to use cilantro or parsley instead of basil.
