Re: arborio rice

I make a risotto rice with sauted shallots,sherry and a sprinkle of asiago cheese. I start with 4 tbl. of butter, saute shallots and risotto. When brownes add beef stock to cover the rice, once dried-up, add 1 cup of sherry, let absorb into the rice and onions. Add more beef stock to continue cooking rice until soft. Serve with a sprinkle of Asiago cheese on top.
