Delicious. Was looking for a vegetarian recipe for greens, as my vegetarian daughter is visiting for the holidays. I did make some modifications due to what was available in my kitchen. I used Collard Greens instead of the Swiss Chard. Since they were collards and not chard, needed to cook longer. Also added a little vegetable broth to help steam the greens and used less cheese and half the olive oil. Also used pecans instead of pine nuts as pecans are in season. Everyone, even the non-vegetarians loved it and I will be making this again.

Another great recipe from this article. Loved the yogurt dressing and will probably use this with other salads. I served this with the stuffed eggplant and grilled lamb chops.

Made this for dinner with grilled lamb chops and the shredded romaine & cucumber salad. Very good. Admittedly I varied the recipe slightly. No small eggplants at my local grocery so I just used the common large eggplants and cut them into quarters before baking. Since tomato's are not in season and frankly, I did not feel like grating tomatoes, I used a can of petite diced tomatoes and cooked it briefly with the onion, green pepper, etc. Both my husband and daughter gave it great reviews.

Re:Slow-Roasted Beef Tenderloin with Thyme

I made this for Christmas Eve dinner. Declicious!! I usually cook tenderloin at 350 so was a little unsure about the lower temp, but the slow cook method worked very well. The thyme gave off a delicious aroma when taken out of the oven which was icing on the cake. I will make this again.
