Re:Oven-Roasted Polenta

This is a genius recipe, and most importantly, I make polenta much more often because it's so easy. Make it for friends last night with a fresh tomato sauce, and I received rave reviews for how creamy and delicious the polenta was. I used 1 cup of milk and the rest water.

Wow! I loved this salad. Yes, it stayed fairly (but not overly) crispy, but cabbage salads are crispy. The flavors were absolutely delicious, and it is a great use of winter produce. I'll make this again and again.

Re:Curried Chicken Stew with Squash and Cashews

We loved this! Quick, easy and delicious. I made it with leftover roast chicken and kabocha squash and upped the heat with a bunch of samba oelek at the end. I thought the cashews were a great addition.

Excellent meal. I also used green cabbage, and my husband and I loved it (even as leftovers). I really enjoyed the ease of making the polenta in the oven. We put a little Italian (super) hot chile oil on top and mixed in at the table. This is a great way to eat seasonally.
