Re:Whole-Wheat Pancakes with Strawberry Sauce

I feel compelled to write this review to counter the only other. I thought these pancakes were a great whole-wheat recipe. In fact, I did find that mine were thinner than the photo, but I prefer that. I don't like thick cakey pancakes. These turned out more like a pancake-crepe hybrid. I used powdered buttermilk in the dry ingredients and added water with the wet. My husband loved them too, and now this recipe is a standard in our house. We didn't try the strawberry sauce.

Re:Bittersweet Cocoa Brownies

I usually substitute olive oil or sometimes coconut oil for the butter, mostly because I'm sure to have the oil on hand and it's one less step without melting. I also love the nutty flavor of olive oil. Don't get me wrong, butter is amazing, but I'd rather eat it straight on great bread or in a croissant, where I can really appreciate the flavor. The texture of these brownies is fantastic whichever fat you use, especially cold, and between the oil, walnuts and cocoa I almost feel like it's a health food.

Re:Warm Roasted Beets & Shallots with Crisp Prosciutto Dressing

Amazing! Used bacon instead of Proscuitto and balsamic vinegar instead of the Sherry vinegar (because that's what we had) and added in the beet greens to the saute. Best preparation of beets ever!
