Re:Quick Chicken Sauté with Tomatoes, Black Olives & Basil

Delicious, easy, quick. Tomatoes, garlic, anchovies, olives etc. are such a wonderful, classic combination. The second time I used bone-in, skin-on chicken thighs, simply spooning off the rendered chicken fat after browning, and continued on. Ummm!

A definite keeper! Two of us don't particularly care for squash, one cooked carrots, and neither sweet dishes, but we both enjoyed this wonderful, easy and healthy recipe. It may be the first one I didn't have to cut the sweetener back drastically on, just delicious as is. Thank you very much, Ellie.

We both enjoyed and will make again. I followed the recipe scrupulously with the single exception of using poblano chiles instead of a bell pepper because they were half the price and very similar in flavor, just adding a very mild heat, which we liked in the dish. They did cook down to almost nothing, so next time I'll add another one later in the cooking.
