I love food, especially cooking with fresh ingredients. I also am busy with a job, and many other activities which often have me getting home quite late. Using my pressure cooker I am able to speed up many recipes and enjoy a home-cooked meal nearly every day of the week. Sometimes even "roast" chicken is a weekday meal. This is my journey to healthy living, and making my own "fast food."

@Lenpo - We found a 7" cake pan at a local cooking store, and they also have them on amazon. We just used a glass lid from another pan that was the right size to cover it. You could make your own lid with tinfoil if you really needed too, just make sure you crimp the edges so no moisture gets in or escapes.

I just tried the same recipe in the oven, and its definitely MUCH better in the pressure cooker - more moist, dense, and sweeter.
