Re:Spicy Red-Eye Baked Beans

This recipe was really good, in addition to the ham hock I also added about 6 pieces of cooked smoked bacon cut up. Although I cooked it in the morning and served it 6 hours later and did not let it sit over night the flavors were fantastic. This dish was not hot in spice but in flavor and I used the 2 tsp of each ancho and chipotle. Great with ribs and sweet corn!

This Jam was sweet and amazing tasting...I hardly doubt that we will ever serve lamb again without this Red onion Jam. Everyone preferred this over the mint jelly sauce. It was quick to make and reheated easily keeping all the flavors!

This was absolutely delicious, I used a 7 pound lamb leg and cooked it at 400 degrees for 40 minutes and an hour at 350. This turned out medium done and fantastic tasting, parts of it were so tender it cut like butter and the taste was amazing...everyone had seconds. I made it also with the onion jam which was sweet and a huge hit, the Jam was better than a mint sauce. Awesome meal!

Re:Moroccan Vegetable Ragoût

This was a great dish to accompany rack of lamb with ancho-honey glaze. The Ragout had a great taste not to bold which I served with slices of fresh bread....great!
