Oh my goodness! This was the best soup! The raita is essential. Such a surprise to find the apple in our bowls. I'll bring this out again for Thanksgiving.

I served this wonderful lightly sweetened pudding in tall stemmed glasses for a fancy presentation. Everyone enjoyed them and I'm happy they were not very sweet.

Re:Individual Toasted Coconut & Lemongrass Bread Puddings

I am giving this a good rating because it was very well received by my guests and my husband and I enjoyed it too. However, I over-cooked the recipe. The timer went off and I was busy and it baked an additional 20 minutes! It was not as moist as I think it should have been. Also, the next time I make this, which I shall do, I will chop and bruise the lemongrass as that flavor did not come through.

This was superb. I used chicken tenderloins because that is what I had in my freezer and they worked very well. We were careful not to over cook them so they were moist and tender.
