Re:Parsnip Risotto with Pancetta and Sage

This was the first time that I had made risotto and it was delicious. I think that next time I would use slightly less sage. The amount of fresh sage was rather overpowering. The parmesan cheese really made the dish. Everyone at the table enjoyed it.

Re:Pan-Roasted Chicken Breasts with Orange-Brandy Sauce

This was a great dish. My husband loved it. I was not able to find boneless chicken breast with skin on so elected to use the skinless variety. They worked just fine-browned up nicely in the pan. Great citrusy flavor but not sweet-just right.

We really enjoyed this salmon dish. My husband generally does not like salmon but he gave it 2 thumbs up. The balsamic sauce gave it a special flavor. We used wild caught Pacific salmon. Very mild flavor.
