Delicious recipe. I didn't have vanilla extract so I scraped the seeds from a pod and put those in, then let the pod simmer with the mix. I reduced the recipe to use just 4 lbs. of fruit, and I still got six half-pint jars full.

I love this ragout; I've made it a few times this summer using garden-fresh eggplant. It's also delicious with a pinch of saffron and smoked paprika.

I love how this recipe highlights the deliciousness of fresh summer beans. It's simple to make and easily adaptable--I added a bit of feta once that gave the salad a bit more heft. Switch out the herbs, too--mint is great.

Just delicious--the lemon zest is very important. Don't forget it! I've used both white wine and apple cider vinegar, and I think they're both great. This salad is such a nice option when you don't want a heavy, mayo-based potato salad.

Re:Potato, Asparagus & Fennel Ragoût

This is such a simple, delicious springtime stew. I would recommend adding the tips of the asparagus about halfway through the cooking time so they don't overcook. Fresh herbs on each serving really brighten the taste up! I made a variation without the cream/mustard mixture, swirling in instead a dollop of sorrel pesto--it was delicious also, very nice if you don't want the creaminess in the original recipe.
