Re:Chocolate-Beet Layer Cake

This cake is wonderful. I found it faster to put the frosting bowl in another bowl with ice and water. This took 20 minutes to get it to the proper consistency beating it 3 times and I didn't have to keep opening the refrigerator.

Re:Chilled Beet and Beet Green Soup

This soup is very flavorful and easy to make. We used salt and vinegar kettle style potato chips instead of the rye croutons. Beets are so beautiful.

Re:Pineapple-Coconut Muffins

I got this recipe to work exactly as it is suggested the second time I made it. The pineapple needs to be put in a strainer after cutting and then the juices need to be pressed out. This will give the batter the thicker consistency it needs. I used a restaurant #14 dasher (ice cream scoop) and then a number #30 for the mounding. The only thing I found off putting was the color of the glaze. It was a gray color not sure why

Re:Chocolate-Dipped Chocolate-Apricot Sandwich Cookies

These cookies were a big hit. I chilled the dough overnight and lightly dusted the parchment papers with natural cocoa instead of flour to roll out the cookies. The dough did not tear and was easy to roll. I was surprised that they were not too sweet.
