Re:Smoky Black Bean & Cheddar Burrito with Baby Spinach

Oh la la! This is fantastic: spicy, crunchy, smoky, and tangy. Easy to make, vegetarian, and delicious. This is my go-to meal when I want something good, but quickly.

Re:Roast Chicken with Fingerling Potatoes, Leeks, and Bacon

I found the leeks came out to be a fatty mush. The chicken didn't absorb any of the flavors from the herbs, and while the potatoes were nice, I'd definitely double up on them next time, while cutting back the amount of leeks.

Re:Chicken Noodle Soup with Lemongrass

Holy amazing mojo soup! I used leftover turkey and the lemongrass paste instead of the stalks. Turned out to be a killer recipe!

Re:Pan-Seared Arctic Char with Olives and Potatoes

Couldn't find char either, so I used salmon and fingerling potatoes. Pretty good, but after the black cod recipe, it's going to be tough to beat!

Re:Crisp Striped Bass with Preserved Lemon, Chickpeas, and Couscous

I substituted fresh black cod for striped bass, as I couldn't find it fresh. I added a little more salt and lemon juice to the chickpea mixture and used halved grape tomatoes. It turned out to be AMAZING. Even my toddler loved it!

Re:Pappardelle with Shrimp & Zucchini

The quality of this recipe really depends on the freshness of the shrimp.

Re:Fennel & Rosemary Beef Tenderloin with Creamy Mustard Sauce

Not bad, but perhaps the cut of beef should've been better? Put in some horseradish with the creamy mustard sauce to give it a little zip. Next time, I'll add more salt and pepper to the fennel and rosemary.

Re:Stir-Fried Pork with Kimchi and Shiitake

Not bad, but will substitute chicken for pork and use HOT kimchi if I make it again. Lacked flavor and seemed flat, for lack of a better word.
