Re:Nutella Fudge Brownies

Ick. Very cute, very easy, and very tempting due to the simple ingredient list. But so dry, and literally tasteless. Chocolate and hazelnut is a classic combination, but you really can't taste either in these.

Re:Smoky Eggplant & White Bean Dip with Pita Crisps

Tasty and light. The mint and lemon give it a great summery zing, perfect for an appetizer at a bbq. I made it for Mother's Day and it's a great way to serve vegetables without the same-old crudite platter.

Re:Spinach & Herb Risotto

I made a couple changes from the recipe, in that just stirred in chopped spinach and diced steamed artichoke hearts in the last few minutes of cooking, and just before serving, tossed it all with some of my classic basil pesto which I already had on hand. But it was excellent! Beautiful spring green colors and fresh light flavors.

Re:Lemon Chicken Breasts with Capers

This is really delicious and not especially complicated. Between pan-searing the chicken, then baking, then removing to make a pan-sauce, this is probably more steps than I would normally consider for a weeknight meal, even though nothing is particularly hard. But because I had mid-week dinner guests, I went ahead with it anyway, and it is fantastic. Followed the recipe exactly except for using extra parsley, and chicken tenders which I was still able to pound out enough to roll into a stuffed packet.
