Re:Authentic Pad Thai

Came out perfect for me. I have made this a few times and think I get better at it each time. Ingredients are key. The tamarind I used was not over powering. Same with the fish sauce. The best version I made was also using good palm sugar. I also used Thai basil last time around and not cilantro which I love. Worth finding the right ingredients. A keeper for me.

Re:Moroccan Chicken with Olives & Preserved Lemons

Very good meal and easy to make. I used kalamata olives for my dish - easy to find. I could not find preserved lemons so made them myself. Actually easy to make preserved lemons so I now have several jars for future meals.

Re:Traditional Guacamole

Very good. I also added a little more cilantro given how much I like it. Used a small red jalapeo as well. All I had on hand. Perfect dip - all loved it.
