Re:Spinach & Artichoke Dip

I wanted to keep the mayonnaise but substituted no fat Greek yogurt for sour cream. Huge hit with men and women. I also increased the spinach and artichokes. Great flavor and the taste of veggies prevailed.

The red pepper flakes is a nice addition to my current recipe. Gives it some kick.

Everything was perfect but a bit bland on taste. I will be working from here to give it some kick. I think some red wine to deglaze the pan before the broth would help along with some red pepper flakes.

Re:Chicken and Dumplings

It was wonderful for Sunday dinner. I halved the recipe for my husband and i with enough for another meal during the week. I added a little sweet onion to the gravy along with some sage, tarragon and basil. The dumplings were tasty, not heavy, and I didn't peak although I was tempted. My husband was in heaven. I served with steamed broccoli. I intend to make for company in a few weeks.

Re:Grilled Vegetable Sandwiches

I started making these back in 1997 when it was first published in Fine Cooking. With 2 vegetarian sons I looked high and low for recipes for them that my husband would enjoy, as well. The Sun-Dried Tomato & Olive Spread added flavors to the sandwiches that accented the vegetables. For the Vegan son I left off the cheese. His loss. Enjoy!!
