I serve this often in the spring as a first course. Followed by a fish entree this is a complete meal. Pastry is very good and easy easy easy.

Re:Tequila-Chipotle Shrimp Tostadas with Lime and Sour Cream

I made these with prepared tostadas (Whole Foods), eliminating one step. Warmed them up slightly in the oven while making the shrimp. This was a unique dinner--loads of flavours, quick and easy. Loved it and my guest bought the tostadas the next day to make her own! The highest compliment!

Re:Green Beans with Meyer Lemon Vinaigrette & Parmesan Breadcrumbs

Made it for Christmas dinner with French green beans already trimmed and ready to go (Costco). 17 people ate the beans and loved them! It's so easy, and flavourful. Lucky for me I have a Whole Foods nearby so was able to get some Meyer Lemons. Will make this often I'm sure.
