Re:Pureed Eggplant Soup with Tomato Relish

Great recipe! I had a 1 1/2 pound eggplant and used the whole thing without changing any of the other ingredient quantities. Rather than dragging my blender out, I just used an immersion blender in the pot - worked great. The texture was wonderful and the flavor just got better over a couple of days.
