Re:Smoked Salmon and Leek Chowder

Super good! I used 2% milk and half-and-half instead of heavy cream and it was still great. Resist adding salt when cooking the leeks, as the hot-smoked salmon makes up for it. Definitely a keeper!

Re:Maple-Glazed Roast Chicken

My local grocery store only had grade A maple syrup so that's what I used. A bit pricey, but oh well. Overall it came out very nicely. Opening the oven every 15 minutes to baste made it necessary to add more cooking time. The chicken did not brown up well, so after it was done I let it rest, then put it back into the oven at 450 degrees for ten minutes. Problem solved. The sweet glaze goes well with a savory side, like stuffing. I would make it again.
