Re:Black Bean and Pepper Jack Burgers

Very easy and turned out well. I also topped these with guacamole. The texture was a little softer than I thought it would be, but they held together fine. I wonder if you could freeze these burgers and have them on hand for a super quick weeknight dinner.

Re:Classic Vanilla Tres Leches Cake

Easy and delicious. A perfect make ahead dessert. It's nice for the summer since the cake is served chilled.

Re:Endive Spears with Sweet Potato, Bacon & Chives

This was the favorite appetizer at my sister's baby shower. Unexpected, but easy and tasty. I will be making this one again!

Re:Fresh Tortellini with Asparagus, Peas, and Mint

Very fast and tasty. I did use more goat cheese as I was trying to use it up.

Re:Four Cheese and Tomato Lasagne

This is what lasagne should taste like. All of my guests were wowed by the bright flavor of the tomato sauce and the delicacy of the pasta.

Re:Short Rib and Dried Porcini Lasagne

Very good, but quite different than your traditional cheese/tomato lasagne. I made this along with the 4 cheese tomato one in the same article for a party of 13. Both were loved, but people were really divided on which they liked more. I made the sauce two days ahead of time and had two extra pairs of hands helping with the noodles which made this pretty simple for the impressive results.

Re:Brandied Apricot-Almond Slab Pie

Really good, but I had too much filling and had to take some out to get it closed.

Re:Pine Nut and Orange Cookies

Unexpected but loved by everyone who tried them.

Re:Doughnut Muffins

My family and I like this recipe. I halved it and got 16 standard size muffins. I thought the nutmeg flavor was a little strong, so I would probably use less next time. I did add vanilla to the cake. My husband thought these should be called snickerdoodle cupcakes instead of doughnut muffins. I agree that they are much more a cupcake than a muffin.

Re:Pineapple-Ginger Brown Sugar Crisp

So simple and delicious. I've made this twice with no problems with the topping. I did make sure the topping was mixed really well. Once I was out of fresh ginger and used a little ground with fine results. This recipe made an even less than perfect pineapple (I think it was getting old and I wouldn't have served it just freshly cut up) taste wonderful.
