This was really good - substituted Thighs for Breasts and left out the Artichokes.

Turned out perfect! I added mushrooms to the recipe at the beginning with the onions, and used 1/2 scallops and 1/2 shrimp which were nice additions.

Re:Ultimate Fluffy Mashed Potatoes

Definately agree that Russets are the way to go with Mashed Potatoes, however I like mine a little thicker, and would recommend using a full 2 1/4 1bs (4 - 5 potatoes) with the rest of the ingredients.

Great recipe - really delicious an unique. I use about 1/4 of the pepper recommended so that the lemon flavor doesn't get over whelmed. This recipe looks much more complicated that it is - try it!

This is so quick and easy my husband has the recipe memorized and cooks it nights I work late! The panko adds the perfect crisp. We don't serve this with the blue cheese sauce, but usually honey mustard instead.

Wow! This is a fabulous, easy dish that really adds some elegance to the average Monday night. I made the full amount of sauce but cooked only 1/2 the meat as the meal was just for my husband and myself. Served with sauteed spinach finished the meal just perfectly.
