Re:Broccoli Rabe and Potato Pizza

Very delicious pizza. I would make again with a few changes. I would cook the garlic with the rosemary. It was a little strong without precooking. I would add 1/2 to 1 tsp crushed red pepper to the broccoli rabe. Make sure to cook the potato slices. I cooked a little longer than 1 minute.

Re:Garlicky Kale Sprout Pizza

Made this for my very picky brother-in-law and husband. I was worried that they would hate it because they are used to pizza with pepperoni, sausage and tomato sauce. In other words, not very adventuresome eaters. They also do not like "green" things. But, they really liked it and I loved it! So did my vegetarian daughter! I was excited when I found the kale sprouts at my local Publix grocery store.

I made these veggie burgers for my step-daughter and niece who are both vegetarians and my 95 year-old mother! They were a big hit. My mother even loved them. I think I will have to make them and freeze them so they can have them instead of store bought. Thanks! I earned brownie points! PS My health food devotee sister loved the miso mayo.

Re:Chocolate-Orange Cannoli Cheesecake

I only gave it 3 stars because it was very dense and I prefer a creamier, lighter cheesecake though everyone seemed to enjoy it. The taste of the homemade ricotta was wonderful. Store-bought ricotta tasted blah compared to it. I may have drained the ricotta too long (8 hours) or over baked the cheesecake (1 hour vs 50 min). I did bake it in a water bath as per the previous review (no cracks). It looked just like the picture. Will definitely make homemade ricotta again and the macaroons in the same issue (knockout).

Re:Strawberry Shortbread Tart with Orange-Ricotta Cream

I usually never deviate from a recipe but I had 4 oz of mascarpone cheese that I added to the ricotta. The result was excellent. I think the mascarpone added to the final result. Guests were all very impressed with the taste and eye appeal of this dessert. A definite "do again".
