Really enjoyed this - easy and tasty summer dinner. Used packaged baby "super green" in lieu of spinach. The dressing is insufficient, so I left it on the feta and dressed the greens with a little lemon-infused olive oil and red wine vinegar, salt and pepper instead. I roasted the steak in the oven. The feta takes this main dish salad over the top.

Re:Baked Rigatoni with Cauliflower in a Spicy Pink Sauce

The pink sauce for this casserole would be absolutely delicious on its own over pasta. I liked the idea of incorporating cauliflower into the baked rigatoni. Not sure if the fontina I used had sufficient flavor for this, but it was good comfort food all the same.

I tried this becasue my family enjoys broccolini and the combination of olives, garlic and capers sounded good.However, the flavor combination was only fair, did not do much to enhance the broccolini, and created two dirty pots and pans besides. A simple way to prepare broccolini is to toss it with olive oil, coarse salt, lemon zest, a squeeze of lemon juice, and a dash of lemon pepper, then roast it (even in a toaster oven) for about 15 minutes at 450. Easy and tasty.

Re:Rib-Eye Steaks Marinated with Fennel and Rosemary

I made half the recipe to feed four. These steaks were absolutely delicious, the marinade imparted a great flavor. I seared them as instructed but took them out of the skillet and placed them on a roasting rack to complete the cooking in the oven.

Great salad. Two drawbacks - calls for a lot of butter, and the amount of liquid to boil down is large and the potato doesn't brown enough once glazed. But the flavor is outstanding. A nice twist on potato salad.
