Re:Truffle-Scented Cornish Game Hens with Prosciutto & Wild Mushrooms

We love truffles so I added truffle salsa and truffle oil. For the mushrooms I used morels. I set the whole hen on top of a bed of risotto made from fennel, onion, garlic, zucchini and button mushrooms vermouth and chicken stock. Basically, the risotto consisted of whatever I had in the fridge that would go together. In its very strong and earthy flavours, this is an adult meal. Next time, I will stuff the hens 24 hours before in order for the truffle oils and the morels to permeate the meat.

Great meal. I now make it about once per month. I've made it with grilled shrimp and always add a crushed clove of garlic and a teaspoon of roasted sesame oil. I have also used cashews for their unsaturated fat content.I'm now adding chopped onion and grated fresh ginger

I marinated mine in buttermilk with a little salt (I have high blood pressure) and used the herb rub as directed. Delicious!! Accompaniment: corn cut off the cob sauteed with onion and garlic, two crushed fresh plum tomatoes and steamed kale seasoned with a little chipotle powder. Your carbs are in the corn. Enjoy.

Great one. I use a mix of cilantro and parsley. I use more garlic and mix in the zest of a lemon or lime to the topping. Very fragrant dish and very quick and fairly elegant for work company on a Monday night! Serve with little new potatoes - steamed and tossed in olive oil and a little mint and fresh garden peas

Add garlic and onions and eat as a quickie on rice - very satisfying.

Good recipe. Quick and easy. I like hot food so I pumped up the heat with a little more powdered chipotle. Great with corn on the cob and a plate full of rapini.
