Re: thai shrimp and scallop curry
This was a great recipe, but it does involve a lot of chopping and prep. beforehand, so be aware that is where most of the work is. Actual cooking was easy. I used half ginger and half galangal. We served it with Jasmine rice cooked in coconut milk and sliced bananas and chopped cucumber on the side. The yellow curry I used was a little light on the chili, and I would have preferred something with a bit more bite. It was also a bit picky afterward to pluck the lemongrass, lime leaves and chunks of galangal out before serving. I might bundle them in cheesecloth next time.

There is a charcuterie here in Ottawa that serves amazing pork belly, and they offer a special appetizer for 10 people that consists of an entire pig's head served family style. Incredible!
