The oven route -350 for 5 hours, as suggested - is way too long - veggies all but disintegrated. Next time I will lower heat for oven or just do slow-cooker on high. Great flavor though!

Fabulous drink - the hit of my friend's cookie party. Essential to have fresh-squeezed grapefruit juice. Tried it both ways and fresh-squezed is so much better. 6 grapefruits made plenty of juice.

Re:Wild Mushroom Risotto

Definitely use the soaking liquid with/instead of chicken broth for a more intense flavor. Love all the mushrooms in here - wonderfully earthy and grounded. Just need a touch of intensity the mushroom soaking liquid would give it. Will make it again!

Re:Parsnip Risotto with Pancetta and Sage

I don't know if it was underperforming parsnips or what, but this recipe didn't have much flavor except for the sage. I LOVE parsnips and ran out to make this once I saw it in the magazine: perhaps more parsnips? perhaps none of that fiddly coring if you are going to blanch them anyway? Or perhaps this should be saved for only the ultimate parsnips, snatched right from the farmer's market (my farmers market was sold out - mine came from Whole Foods)
