Re:Pork Scaloppine with Prosciutto, Sage & Caramelized Lemon

This dish was delicious! I used pancetta instead of prosciutto since thats what I had on hand. I miss-read the directions and rolled the pancetta and sage in the scaloppine instead of wrapping. It worked perfectly but next time I will definitely make as directed since it makes such a pretty presentation. The sauce is incredible and so easy.

Re:Fettuccine with Tuna, Lemon & Fried Capers

This recipes was delicious and quick. The fried capers were amazing, becoming nutty and delicious. I always keep a jar or two of imported Italian tuna in olive oil for those weeknights when I want to make something quick for dinner. It has a much better texture and flavor that the typical canned stuff. I think this plus using capers packed in salt rather than the brined capers makes this recipe extra special.
