Re:Seafood Gumbo

This was fairly simple and straightforward. I didn't think the roux was quite as rich as what I ate in New Orleans. I simmered the shrimp shells in clam juice for extra flavourful. I'm going to try a butter based roux recipe next time.

This is my go to recipe for hummus. It's great with canned chickpeas but even better with homemade. I find homemade a little easier to digest. If I forget to save the cooking water I thin it with a little unflavored yogurt.

Re:Flourless Chocolate Cake with Chocolate Glaze

I've tried numerous flourless chocolate cake recipes because they're gluten free. This recipe is definitely the best in terms of taste and ease. One trick to really make it look fancy is to make a little extra glaze and dip fresh strawberries or star fruit slices half way into the chocolate then line them up around the glazed chocolate. It looks amazing!

Re:Spanish Potato Tortilla (Tortilla Española) Recipe

Ok I did something disastrously wrong! This looked like scrambled egg mess. The flavours were fine but I couldn't get down the technique of flipping the tortilla. Couldn't it be done like a frittata where it is finished cooking in an oven (so you don't have to flip it) but it still cooks on top??

Re:Tiramisù Cheesecake

Brought this to a friend's Xmas open house and this was the first dessert to disappear--despite their being about 20 other desserts as well! Not too difficult to make. Also, I've never used the chocolate crust, I've stolen ideas from other recipes and crushed various cookies (in a processor) to make the crust e.g. amaretti and ladyfingers cookies. could probably skip the sugar in the crust.

I was pleasantly surprised how easy and healthy and delicious this turned out. The carrot juice reduces down beautifully leaving a rich, thick sauce. Fabulous!

For adventurous diners this dinner is easy and delicious. I'm still working on the type of green olives to use. The ones in the jar are tasteless. I'm going to try Italian cracked green olives next time. I also reduce the garlic and I don't think it affects the final result.

For years I have been making an Apple Bundt cake from the Epicurious website but this one is WAY BETTER! This is my new go to Fall apple cake recipe. The candied ginger and streusel is sublime!!!
