Re:Chocolate Soufflé Cookies

I made them for a friend who is gluten and nut free. I substituted finely chopped ginger for the nuts. Very good. Easy to make and well received.

Re:Chicken Tostadas with Black Beans and Cilantro-Lime Cream

Tasty dinner, but tortillas were crispy brown in under 7 minutes. Served with avocado.

Re:Chicken Breasts en Papillotes with Celery, Bay Leaf, and Tomato

Very tasty. I was certain the chicken wouldn't cook through and opened the first packet with trepidation; it was perfectly done. The celery and fresh bay leaf gave the dish a unique taste. I served it with mashed potatoes and green beans. I would make it again.

Re:Twice-Baked Sweet Potatoes with Leeks and Sausage

Delicious addition to a fall dinner. I added chopped walnuts for a little crunch. The recipe was accurate and easy to follow except for an ingredient listing for olive oil, but no mention of it in the directions. Rave reviews from everyone at the table.

Re:Lamb and Sweet Onion Pitas with Orange-Cucumber Salad

Very yummy. I served it like a taco salad over mixed greens and it was very tasty. Adding the cinnamon to the ground lamb really brings out the flavor. This is a recipe I will make again.

Re:Chicken Thighs Roasted with Rosemary, Red Onions & Red Potatoes

When I'm wondering what to make on a chilly night this recipe fits the bill; comfort food and it warms the kitchen. It has become a family favorite requested by teenagers.

Re:Spicy Red Lentil Dal with Lamb and Vegetables

I was disappointed with the results of this recipe. I followed it closely with poor result. We had some raita in the refrigerator from our favorite Indian take out and that helped some, but no one really liked it. I would not make it again. I am not used to being disappointed with Fine cooking recipes.

Re:Quick Shrimp Pad Thai

Once all of the ingredients are assembled, this is easy and delicious. My fourteen year old daughter and her friend declared it "better than take out!". I consider that a high compliment. I used the small shrimp and I think they are well suited to the recipe. This will be new standard in our house.

Re:Turkey Tacos

I serve this as a salad with some refried beans, guacamole, and heated and broken taco shells. I have made it with the chipotle tabasco as well as the jalapeno (green pepper sauce) variety. Both are tasty. The taco meat is far superior to the envelope of seasoning mix and almost as easy. A satisfying, easy and quick weeknight meal.

Re:Lemon-Ginger Poached Halibut with Leeks & Spinach

Made it for two in my 3 quart All Clad saucepan with two pieces if Chilean Sea Bass. I halved all of the ingredients and the results were delicious! The mint adds a nice touch.
