I could not see why a temperature-controlled water bath should cost so much, and I didn't want a large appliance that was useful only for sous vide.

So I bought an industrial temperature controller for about $50 and wired it to control a slow cooker. It has a temperature probe that goes into the slow cooker. Then the slow cooker plugs into the controller and the controller plugs into the wall outlet.

When the temperature is below the setting, the controller provides power to the slow cooker. I've found that it maintains temperature to within about one degree.

So there you are! Total cost about %50. And the only new appliance is the controller, a box about 1/3 the size of a small cigar box.
