This recipe is delicious. I roasted the breasts at 425, as I was also making the quick side of roasted carrots and bacon, and 30 minutes at 400 didn't deliver the crispy bacon I wanted. The chicken came out juicy and tender. I'll make this again and again.

Just made these for my holiday open house. Big hit -- glad I doubled the recipe. Reserving 1 cup of vanilla batter was way too much-- only needed 1/2 cup. They're just sweet enough.

I paired this with the suggested broccoli raab, which was perfect. In addition, I made whole wheat orzo, to which I added lemon zest and grated pecorino at the end of the cooking time. A lovely light dinner for a work night, easily adjusted to serve one.

Re:Ultimate Carrot Cake

I served this at my annual holday party, and everyone raved -- best carrot cake they'd ever had. The cake was moist with a fine crumb, and the icing was not overly sweet but satiny and a perfect foil for the cake.
