Re:Grilled Tuna and Provolone Sandwiches with Salsa Verde

Well, I made this for a Friday night Lenten change of pace and with the first bite felt guilty as this was definitely not a sacrifice. The amount of tuna was a bit sparse and I will use extra the next time. I made the salsa the day before so it was really easy to put together the night I served it. Looking forward to this again this week!

Re:Slow-Roasted Pork Shoulder with Carrots, Onions, and Garlic

Just finished the roast pork. May seem strange but I did make this for just my husband and myself as we like the idea of having quick meal ingredients in the freezer. I am looking forward to the meal with the soft polenta for next week. Later this week, we will do the pork sandwiches. My only complaint is the amount of salt. It made the juices and the vegetables too salty so if you are not a salt lover, you may want to reduce the amount of salt.
