Re:Fusilli with Peas and Feta

This is incredibly easy and delicious. I skipped the feta because I'm trying to cut down on saturated fat and didn't miss it. I liberally sprayed lemon on my portion and it really brightened up the dish.I didn't use all of the sauce but I saved it for other dishes I'm making this week. It seems like it may work as a smear on a plate for chicken or fish.My husband said this recipe was a keeper and I agree. Very yummy!

Re:Thai Grilled Green Mango

I really enjoyed this. The only thing I did differently was I added extra water to the marinade because it was too fishy for my taste. I used the leftovers in a salad with arugula, mango and chicken (http://www.finecooking.com/recipes/thai-chicken-breasts-herb-lemongrass-crust.aspx). Drizzled a bit of olive oil, rice wine vinegar, lime zest, salt and pepper and it was awesome. I'll definitely make this again.

Re:Grilled Thai Chicken Breasts with Herb-Lemongrass Crust

Delicious! It's just the two of us so I had left over chicken. I also made the Thai Green Mango recipe (http://www.finecooking.com/recipes/thai-grilled-green-mango.aspx) and had some left over so I made a salad with arugula, mango and chicken. Drizzled a bit of olive oil, rice wine vinegar, lime zest, salt and pepper and it was awesome. I'll definitely make this again.

Re:Summer Corn Soup

This soup is delicious and I will definitely make it again. I added a few things to the garnish because I don't like sour cream so I used red pepper, avocado, tomato and basil.

Re:Feta & Dill Galette with Lemony Spinach Salad

I love this recipe and will definitely make it time and again. I would have never thought to pair lemon zest with egg but it's a light, refreshing flavor combination. It's great for breakfast, lunch and dinner.
