Re:Beef and Green Chile Chili

I mean don't get me wrong this was delicious... It was just SO many steps!! Come, now- have you ever had delicious chili that you just threw all the ingredients in the pot? Totally. So roasting the peppers and making tortilla chips?? Holy cow. My family gobbled it up so that was worth the effort but if they didn't!!! Ha ha- I don't know what I would have done. Luckily I started this recipe at 8:30 this morning. Phew!!

Re:Bison Burgers with Thousand Island Barbecue Dressing

Simple and delicious! I am only giving these a four star rating because I needed two pounds of bison and that was 20$$$ holy cow! or holy bison :) Anyways, the secret sauce was the bomb and would have been good on anything... beef, turkey, veggie burger. Would definitely make these again- when I am rich!

Re:Penne with Crisp Prosciutto, Zucchini and Corn

A very good recipe. The second pasta of the season I have made with corn! A combination that I was initially skeptical about. I think I would have liked an addition of pine nuts. Next time!

Re:Spring Leeks, Fava Beans, and Bacon

Good! I added zucchini to this because it was fresh from my garden and also used regular bacon because I had it. Made this as a side dish not a main.

Re:Seared Scallops with Warm Radicchio and Pancetta

I feel bad even reviewing this- HOWEVER- We had jumbo shrimp from costco in the freezer and I just could not justify spending more money on scallops when I thought jumbo shrimp would be great. And it was! absolutely delicious! served with roasted pearl potatoes. Really, really, really good! Also couldn't justify spending money on pancetta when I had bacon ready to use in the fridge. Call me cheap... or actually call me a women cooking for 6 on a budget. Worked great even though I HATE to change a recipe I know will work due to $$$.

Re:Garlicky Chicken Thighs in Red Pepper Sauce

I really liked this but I really love anything braised. It look a little longer than three minutes on med high heat to get the skin side brown but I also think that the additional pan frying made for a perfectly cook thigh in the oven. The sauce was good however I wish that this was served over whole wheat cous cous to sop up that awesomeness. The bread was good but just didn't cut it.

Re:Udon with Tofu and Stir-Fried Vegetables

I have not yet made a fine cooking recipe that wasn't five stars. This was delicious! I hate to brag but my kids love tofu- they eat it first. I doubled this recipe and the whole family was slurping away :)

Re:Pan-Seared Rib-Eye Steak with Balsamic Onion & Tomato Salsa

We had this for a decadent Saturday meal with tri-color baby potatoes and a field greens salad. The "salsa" on top was just divine!!! I think it should be something you memorize and serve with chicken and fish too. All the flavors worked so well together. Bravo!
