Re:Almond-Crusted Chicken and Nectarine Salad with Buttermilk-Chive Dressing

My husband and I loved this chicken. The crunchy nuts and the wonderful dressing made this a very special recipe. So I could have it for two dinners, I did not cut the recipe in half as I often do, but only cooked half of the chicken each night and made a fresh salad each time. I also made the recipe for homemade buttermilk that another reviewer suggested. It worked perfectly. Along with mashed potatoes and a vegetable, it was a really great meal.

This is a great weeknight meal. It was quick, easy, and tasty. I served it with the green beans as suggested, along with a green salad, and it was enjoyed by all.

This was excellent. With only two of us, there will be enough for a second meal. The only change I would make next time would be to double the sherry cream sauce. It was so good we almost finished it tonight, so will make more for the leftovers.

Re:Spaghetti with Portabellas, Sage & Walnuts

What a wonderful meal. This recipe is EXCELLENT. The secret is to make sure to saute the sage until crisp and really brown the butter as directed, and to toast the walnuts. I also grated real parmigiano reggiano cheese. For two of us I cut the recipe back to 8 oz. spaghetti and 2 portabellas, and adjusted the remaining ingredients. So easy and quick--a great recipe.
