Re:Beef Stew with Root Vegetables and Horseradish

Excellent! I added 2 bay leaves, used 4 c. beef broth, no water. I let the beef cook in the oven for 2 hrs. before I added the veggies. Thickened with cornstarch and water. Husband and son loved it as did I. Great for a cold, windy January night. The horseradish is a great addition.

Excellent! Definitely a keeper. My husband, son and I loved it. I cooked this in a slower oven for a longer amount of time, the meat was incredibly tender; used quick cooking Barley and added it about 10 min. before we were ready to eat. I only used 1 stalk of celery and added a bunch of celery leaves. Great flavor. Didn't make the croutons, maybe next time. There will definitely be a next time!

Re:Butternut Squash Soup with Apple & Bacon

Excellent soup. I used pre-cut squash for convenience and followed the directions except added 3-4 chopped shallots with the apples. After pureeing added a couple shakes of curry and about 1-2 TBL real maple syrup. I left ours thick and slightly lumpy which is the way we like it. Will definitely make this again. Yum!

Re:Roasted Shrimp with Rosemary and Thyme

Made this recipe exactly as written, delicious. Possibly even better when cold. Today I made this but used the herb oil to roast asparagus. Again, delicious. The only thing I did differently with the asparagus was to sprinkle a little grated Parmesan cheese over it just before serving.

Re:Salmon Seared on Bacon with Balsamic Vinegar, Honey & Rosemary

My salmon came out a bit dry; don't know why, probably just cooked it too long. The taste of the salmon with the bacon is quite nice. My husband and I both loved the sauce which I think would be great with chicken as well.
