Re:Pumpkin Spice Bread

Very moist, tender, sweet, and spicy--but what to do with all that leftover pumpkin? After my success with Ms. Weil's Chocolate Chip-Banana Bread, I thought I could get away with dividing the batter between only 3 (19-fluid-ounce) loaf pans. However, as the pumpkin-bread batter rose, instead of puffing up, it oozed over the sides of the pans and onto the oven floor. I should have heeded the admonishment to fill the pans no more than 2/3 full.

Very flavorful and moist, and the inner streusel layer adds interest. I divided the batter into only 3 (19-fluid-ounce) mini loaf pans, and it didn't rise much above the rims. Therefore, slightly doughy result. My husband loves this bread and doesn't see the point in baking any other sweet bread now that i have this recipe. However, I want to find a fecipe that will rise more reliably.

Re:Mexican Black Bean Burgers

Complex and delicious, these burgers reheat well in the microwave. However, they were a bit too salty for my taste, and i think next time i'll use parsley instead of cilantro. My husband, who disdains veggie burgers, was accepting if not enthusiastic. He took a second helping.

Re:Honeyed Cauliflower with Toasted Almonds

This recipe may be too fussy and time consuming to include in a holiday menu, but it's well worth the effort when you have the leisure to chop thyme. My husband won't eat cauliflower any other way now that he's had it with honey on it.

Easy and delicious. It's even good at room temperature. (It appears that Bonams failed to take monounsaturated fats into account in the C+ nutritional rating.)
