Re:Spinach, Feta & Sun-Dried Tomato Phyllo Triangles

I've never worked with phyllo dough before and I found it very difficult separating the sheets without tearing them. However, the final product was delicious! Everyone loved them at my book club meeting. I will definitely make it again with a different phyllo brand. Maybe I'll have better luck with a different one.

Great recipe! I didn't have time to do the 12 hr marinating time but I don't think that made a difference. I also used a pressure cooker to cut down cooking time. The meat was so tender! I also reduced the sauce to concentrate the flavor. The glaze is amazing and that and the sauce on the meat were fabulous.

Re:Buttercream Frosting

Made this for the first time yesterday and it was a success! I followed the recipe religiously and watched the video too o make sure that I did not miss anything. I left the butter out for a couple of hours but it still wasn't soft enough so I turned the oven on and placed the sticks of butter on the stove and that softened the butter quickly. I thought it would be tricky to pour the syrup on the side of the bowl, but it was actually quite easy. I added a mixture of instant espresso powder dissolved in Kahlua at the end and the Buttercream tasted wonderful at the end. It was light, buttery and tasty!

Great recipe! It delivers what it promises--a smooth creamy pesto. We both loved the color and the taste. I will definitely make and freeze more pesto with all the basil we have left in the garden. Worth the extra step of blanching.

Re:Peach & Blueberry Crisp with Spiced-Pecan Topping

This was delicious. I had only about a cup of blueberries so I upped the number of peaches and it was still fabulous. I didn't have pecans so I substituted toasted walnuts and it made the topping crunchy. I don't think the nuts make it tart at all. It gives it a nice texture. I also liked that it's not overly sweet. Great recipe! Will make again!

Re:Butternut Squash Soup with Apple & Bacon

I've made this twice now and it's a favorite with the DH. The second time around I poured out all of the bacon grease from the pan except for a tablespoon. That reduced the fat content a bit and toned down the bacon flavor a little bit. I added some canola oil to replace the grease and browned the butternut squash in batches so they would all brown nicely. Other than that, I followed the rest of the recipe.

Re:Roasted Broccoli with Lemon & Pecorino

We really enjoyed this dish. It was really easy to make. At first when I tossed the roasted broccoli with the lemon juice, it tasted too citrusy. However after letting it sit for a few minutes with the pecorino, the lemon juice mellowed out and the broccoli tasted great. We will be making this regularly from now on.

Re:Crisp Curried Chicken Fingers with Honey Mustard Dipping Sauce

DH and I really loved this. Very easy to make and tasty. I used Madras curry powder which isn't mild at all but it wasn't overpowering either. We're big Indian food lovers so the stronger curry flavor was not a problem.
