Quick, easy and delicious! My family loved this side dish...and it received rave reviews when I served it at a recent gathering (two of my guests asked for the recipe on the way out - which felt great since I'm always asking them for recipes of their awesome dishes).

Re:Shepherd’s Pie with Cheddar-Spiked Mashed Potatoes

Overall this dish was relatively quick and easy to make (which is what drew me to it for a quick mid-week meal). However, flavor seemed to be a bit lacking once the final product was presented. I used 90% lean ground beef in my version and while after I finished sauteing the vegetables and browning the meat the combo smelled very good, once I topped it with the mashed potatoes and baked it the flavor seemed lost. I love potatoes, but I found the flavor to be rather bland...I didn't pick-up on the cheese at all. And though I strained the ground beef mixture when transferring it to my baking dish, there still seemed to be a great deal of liquid in the final dish. I'd give this one another try though, in the hopes of increasing the seasoning and boosting flavor.

Re:Sear-Roasted Salmon Fillets with Lemon-Rosemary Butter Sauce

A great dish which will most certainly be served again in our home! We used 1 lb of salmon since it was only my husband and I, so we ended up only using about half the sauce made (and have saved the other half to make the same meal later in the week at my husband's suggestion given how much he enjoyed it!). Also, I didn't have fresh rosemary on hand, but did have fresh dill which I know goes well with salmon and we weren't disappointed. It was very simple to make although I did have trouble with the fish sticking a bit to the stainless steel pan, so I left it on a few minutes longer than suggested on each side (5 on the first side and 3 on the other). Given the extra time on the stove top, I was afraid of overcooking it in the oven, but I stuck with the suggested time in the oven (about 5min) and it came out perfect! Maybe next time I will try to use a non-stick pan as suggested by the previous reviewer. All in all, this is a winner!
