Re:Pumpkin Pecan Spice Cheesecake

Flavor balance was off in this cake. Not enough pumpkin and too much spice. The texture was off as well. The mixing method doesn't add the sugar directly to the cream cheese and that seemed to be the problem. Made the Pumpkin Cheesecake from Cook's Illustrated right after this one and it was excellent. This one is just ok.

Deceptively simple and delicious. Didn't even use the chicken stock, just water and the white wine. Shallot butter would be incredible in many different applications. Thank you, Fine Cooking!

Re:Cranberry Streusel Cake

This cake comes together quickly and has a very tender crumb. I would make it again but double the crunchy topping!Also, I used 1/2 whole wheat pastry flour in place of the white and that worked very well.
