Re:Lamb and Prune Stew

Outstanding dish! What better on a cold winter night than a rich and comforting stew. A friend said that she did not care for lamb but she loved this. I made sure to trim the lamb very well of all fat. I found that the prunes broke down and almost disappeared but I had also added some dried apricots which kept their shape and gave a hint of sweetness. Overall, a keeper for me!

Re:Mushroom and Spinach Skillet Strata

Made this according to the recipe and it was very good. I found that it did cook in the time indicated for me. But I did broil it for a minute to brown the top a bit. I think my preference would be for a different cheese but that it just my taste. I think Swiss would be excellent. I liked that it was easy to make and did not take long to cook. Did most of the prep ahead so it was very speedy to put together.

Outstanding----easy to follow directions. The pastry is delicious and tender and not difficult to make. I made it a day ahead and chilled it overnight in the fridge. The filling was very tasty although I added extra lemon rind for additional zest. It was a huge hit at a family dinner--everyone had seconds!!

Re:Butternut Squash Risotto with Bacon & Sage

Oh my this was good--so good that my husband and I ate it all!!! I did need quite a bit more broth (500 ml, 2 cups) but I thought the amount of broth was a bit stingy based on other risotto I've made. I like the idea of roasting the squash a bit first as it seemed a bit hard when I thought the rice was done. However, a few more minutes of cooking and it was done.The fried sage leaves were surprisingly good and the cooking seemed to mellow the flavour quite a bit. I would cook even more next time. This is a keeper and perfect for a cool fall dinner.

Re:Roasted Carrot Soup Recipe

I have made this recipe 3-4 times and it has a fabulous flavour. Used vegetable stock for a vegetarian version and chicken stock the other times--equally as good. Loved the hint of ginger---I would even add a bit more. I like it best made with the sweetest carrots I can find which turned out to fresh organic ones. Made a day ahead makes it a great addition to a dinner party menu.

This is delicious! Not overly sweet and not too rich--I followed the recipe exactly using Cointreau and it was a big hit. Defnintely a great summer dessert that you can make ahead. I made it 8 hours ahead but it would be even better if made the day before to allow all the bread to soak up even more juice.

We loved this. Used mild sausages but based on other reviews added some hot pepper flakes. Used the fresh mozzarella which melted beautifully. Makes 4 very generous servings--probably would serve 6 easily. A tossed green salad as the side was all that was needed.

Re:Spinach & Goat Cheese-Stuffed Chicken Breasts

Very very tasty. Takes a bit of time to prep but that can be done ahead. It would be good company meal. I had extra filling so I baked it along side the chicken. Needed almost double the bread crumbs and could have used only 1 egg. Definitely a keeper.
