Re:Chipotle Chicken and Corn Tostadas

Another great one from Find Cooking! I pretty much made it as written but couldn't find the tostada shells so I just used soft tortilla shells, tasted great. I also served with the slaw from this FC recipe http://www.finecooking.com/recipe/baja-fried-fish-tacos .... So good!

Love the suggestion of using sour cream in lieu of butterI would like to try that!I made a few changes only because of what I had in my pantry and it worked.1. I used 1c white flour 1c whole wheat pastry flour2. I used all three of the suggested bananas3. I only used 1/2c sugar.4. cinnamon instead of nutmeg (personal preference)5. Chocolate chips! (mostly because I wanted this as an after dinner treat:)6. I omitted walnuts because I didn't have any....I am curious to know if anyone has used zucchini ???

This was super easy and great! I made a few small changes. 1. Added smoked paprika to marinade mixture 2. To decrease dishes I sauted shrimp in a large fry pan. 3. Added the cheese at same time I added peppers (in fry pan with shrimp) along with 1/2 cup of pasta water instead of 1/4 cup I think they suggested 4. Added spinach just before serving

THANK goodness I read the other reviews before adding the entire rum sauce to my veggies (I added other veggies too like onions and peppers) and shrimp. This was disgusting. I rarely say this about anything from Fine Cooking but this was bad. After sauting the vegetables I only adding about 1/4 cup of the sauce which was about 1/4 too much. I nixed it and ending up trying to turn it into a more traditional stir fry. Even after mixing the lime juice, rum and cornstarch it looked and smelled like a bad cocktail!

I also added less water and salt. I used ground turkey instead of the other meats and the meatballs came out great!
