Re:Sautéed Ratatouille

So worth the effort. One only has to make this dish to be reminded how amazing vegetables truly are! I added sauted quartered mushrooms to the veggies part and a healthy dose of red pepper flakes to the sauce while it reduced. Lots of good yum-yums in this dish! Would make with 2-3 pans to shorten the process next time. Lovely over wholewheat pasta, second day left overs for lasagna.

Re:Endive and Watercress Salad with Apples and Herbs

This Endive Watercress Salad was delightful. I sometimes struggle with the bitter greens and cleaning Watercress to get to the good pieces, but not this time, it was well worth it. It has just the right amount of sweet crunchy flavors mixed with a light bitter richness. I added a little small amount of good french mustard to the dressing for some extra zing.
