Re:Sear-Roasted Halibut with Tomato & Capers

My husband loved it as is, without the capers (I didn't have any on hand). I think it would be better without flour too. Served with whole wheat linguini and a salad.

Re:Roasted Cod with Lemon-Parsley Crumbs

I used Halibut and it turned out really good. I also loved the balance in the crumbs!

Re:Ultimate Fluffy Mashed Potatoes

These potatoes turned out really creamy. I used a little under a cup of creme fraiche and that was more than enough.

Re:Herbed Grilled Chicken Breasts Recipe

This chicken turned out extremely moist and flavorful. I used cilantro because it was the only herb on hand.

Re:Wine-Braised Chicken with Shallots and Pancetta

This dish is wonderful! I didn't have a dutch oven so I used two smaller cast iron pots. I added 1 more carrot as well as additional chicken to each pot and the recipe accommodated the extras. Hubby says it's a keeper!

Re:Roasted Salmon with Shiitake, Leek & Arugula Salad

I loved this recipe! My husband asked for more so this is definitely a keeper. Instead of trying to time everything just right I took the salmon and veggies out all at the same time and it worked. I think I will add potatoes to the mix next time ;)

Re:Spiced Salmon with Yellow Peppers

I thought this dish was great! After work, you just want something quick and easy and this hit the spot. I didn't have oregano so I used thyme and instead of regular orange juice I used an orange mango blend (Simply Orange) and it was delighful. Because my picky husband liked it too it stays on the weekday menu.
