Re:Sirloin Tip Steak Sauté with Leeks and Asparagus

Used London broil (no sirloin tip available), cut 1/2" thick. Perfectly delicious. Could use at least 50% more asparagus.

Re:Orecchiette with Tomatoes, Basil & Ricotta Salata

this is my go-to recipe for summer perfection. Let the tomatoes stand for a bit with the garlic, use the best produce you can find, do not skip the seeding of the tomatoes. Dried pasta is fine. I use feta rather than ricotta salata (because it's easier to get), and I use more than is called for (to add the saltiness that some tomatoes crave). My kids call it "taste of summer pasta". DON'T bother to make this if you don't have ripe, fresh tomatoes. Winter tomatoes will not do.

Re:Pecan-Chocolate Squares

As everyone says, these are easy to make, delicious to eat, but difficult to cut. I make them in a silicon pan, turn them out onto a plate when they are mostly cool, and turn again (now right side up) onto a cutting board. Cut with your longest knife and you're good to go. Easier to cut before they are ALL the way cool.

Re:Buttermilk Pie

This is a fabulous summer dessert, rich and tangy. The recipe works just as written. My tribe says to serve it warm, and they liked having cut up fruit (strawberries this month) along with it.

Re:Browned Cauliflower with Anchovies, Olives & Capers

This is a fabulous combination and makes cauliflower the star of the meal. Choose olives that you like...they can overwhelm.
